Chicken Chili with Corn

This recipe, perfect for 6-8 servings, is a lighter take on the classic chili con carne , swapping out the traditional beef for succulent chicken. In just 40 minutes, you can create a hearty and satisfying dish that will warm your soul.



Back when I worked as a chef in a local restaurant, we often prepared a classic chili con carne for our Spanish guests. Today, we present a lighter version that showcases the versatility of chicken. Let’s dive into the ingredients and preparation!



To begin, finely chop 1 onion and cut 3 carrots and 2 parsnips into bite-sized pieces. Sauté these vegetables in a pot until they start to soften and develop their natural flavors. While the vegetables cook, dice 1.2 kg of chicken breast, 1 small zucchini, and 1 red pepper, then add them to the pot.





























As the chicken begins to take on a golden hue, season it with cajun seasoning , paprika, salt, and pepper. Let the flavors meld for 1-2 minutes before adding canned tomato pulp, allowing the mixture to simmer gently for 10-15 minutes over low heat. This simmering process allows the savory flavors to intensify and meld together beautifully.









Now, it’s time to introduce the delightful duo of canned red beans and sweetcorn to the mix. Add them, including the liquid from the beans, to the pot and continue simmering until the chilli reaches your desired consistency.









If you prefer a spicy kick, feel free to add some chili pepper. You can also enhance the flavors with your favorite herbs, adding an extra layer of aromatic goodness. The medley of spices and seasonings will delight your taste buds and warm you from the inside out.
