Ingredients 100 g quinoa cooked 150 g cheese grated 1 small pepper 4 mushrooms 2 eggs 1 handful of baby spinach salt pepper Metric – US Customary
Instructions Bring a small pot of water to a boil (twice that of the amount of quinoa). When the water starts to boil, rinse the quinoa well and boil for about 15 minutes. Mix the boiled quinoa with the grated cheese, diced peppers, mushrooms, eggs, chopped baby spinach, salt and pepper. Divide the mixture into 12 muffin tins, greased with olive oil beforehand. Bake for about 25 minutes at 175 °C (347 °F). They can be made with chicken, shrimp, ham, eggplant, greens, and different types of cheeses, so you can play around for your perfect combination.
