Taco Soup

Everyone loves a good comfort food dish, and that’s what this is! Although this taco soup recipe is titled a “soup,” it’s not really a soupy soup. It’s more like a thick chili that is adorned with some great toppings.

lean ground beef
lean ground turkey
onion
canned kidney and pinto beans
canned sweet white corn
canned Mexican-style stewed tomatoes
canned diced tomatoes
canned tomatoes with chiles
canned diced green chiles
taco seasoning mix
Ranch salad dressing mix
Fritos and desired toppings

Brown the beef and turkey with the onions in a large skillet. Drain fat, then transfer cooked meat and onions to a large slow cooker (or stockpot). Add beans, corn, tomatoes, chiles, olives and seasonings; cook in slow cooker on low for 6 to 8 hours (or simmer on low heat for about 1 hour if using a pot on the stove).
To serve: sprinkle a few corn chips in the bottom of a bowl and ladle soup over them. Top with desired garnishes.

You can change up the beans– using white beans or chili beans.
It’s okay to leave out the corn. Honestly, I wouldn’t mess with the rest of the ingredients though. The combination of everything just works in this recipe!
