“Simple Chicken Noodle Soup” from “Start Here”





As I’ve said before, during the winter months, I am very much in my Soup Era. (Apologies to those of you who do not understand this Taylor Swift reference .)



The best things about soup are the most obvious: they’re straightforward to make, the ingredients are usually to hand, and they warm you up. Good things, all.



One of the pitfalls of pasta in soup– particularly when it comes to leftovers the next day– is that the pasta will absorb a great deal of the broth. One of the genius tips in this recipe is you soak the pasta in water while you crack on with making the rest of the soup. This certainly worked the night we had the soup, but when I went back the next day, the pasta had still absorbed a whole bunch of stock. This truly is no biggie, however, as it just means I needed to add more stock to the leftovers to have soup again.



This was another winner, both the night we had it, and the next day, when I had it for lunch. My Soup Era continues.
