“Gnocchi with Broccoli and Lemony Ricotta” from “Hot Sheet”





When I read through the method for this dish, I never thought in a million years it would work.



Spoiler Alert: It did.



Basically, what you do is you toss the broccoli, olive oil, seasonings and the gnocchi together before spreading it on the sheet pan. Then you add a bit of water and a bit of double cream, seal it with foil and bake it.



Given the small amount of liquid, I never thought it would work. But when I lifted the foil after 10 minutes, sure enough, it was all cooked and looking great.



We will definitely be enjoying this again.
