“Perfect Salted Shortbread” from “Sweet Enough”





In recent years, shortbread has become my go-to recipe for when I’m having a very, very bad day. The fact is, I usually have all the ingredients to hand, and there is nothing like the combination of lots of butter and lots of sugar to perk a woman up.



(My love of a good shortbread even predates its use in Ted Lasso– IYKYK– but seeing it there only validated its importance in my life.)



Consequently, I have been on a quest to find the best shortbread recipe. I’ve tried dozens, all with varying success. And yes, I even tried a few of the Ted Lasso versions, but for one reason or another, I feel as though I have yet to find the perfect one.



After trying Alison Roman’s version, I have to say: The quest to find the perfect recipe continues.



There’s nothing egregiously wrong with this one, but it’s not better than the one I currently use, so it’s not going to knock it off its top perch. (If you’re wondering, my current top recipe is this one from Cambridge institution Fitzbillie s. It hasn’t failed me yet, but still, I wonder if there’s a better version out there somewhere.)



These are fine, truly, but “fine” in the way a grumpy teenager would reply after you’ve asked them about their day. There’s no such thing as bad shortbread, but I’ve had better, and I suspect so have you.
