Hi Friends!
Here’s my weekly post sharing about what’s going on in the world of RecipeGirl, as well as some fun links to things I’ve come across lately. Sometimes, you just want a salad for dinner!

This  Beef Fajita Taco Salad  is made easy using ground beef instead of steak, with all the fajita fixings and a homemade avocado dressing.
This  Fried Chicken Salad  is a little lighter than your typical deep  fried chicken . Added tomato, blue cheese and honey mustard dressing make it delicious!
Salad Nicoise is a salad that originated in France. It’s traditionally a tuna salad that has green beans, hard-boiled eggs and olives with a lemony dressing.
This  Fruity Curry Chicken Salad  recipe is just the thing to serve for a light dinner
Mustard Dill Salmon Salad  is a fabulous, restaurant-style salad with balsamic vinaigrette.
This  Mandarin Chicken Spinach Salad  is a beautiful, delicious Asian style salad recipe.
This  Greek Tortellini Salad  is the perfect, easy salad to make and serve at a party or barbecue.

What I’m watching and reading :

I’ve just started watching Special Ops: Lioness with Nicole Kidman and Zoe Saldana (on Paramount+).
I’ve been listening to The Stranger in the Woods by Michael Finkel. It’s a good one! From Amazon: This is a remarkable tale of survival and solitude – the true story of a man who lived alone in a tent in the Maine woods, never talking to another person and surviving by stealing supplies from nearby cabins for 27 years.


Fun Recipes I’ve spotted on the internet this week :

Mango Salsa would be a good appetizer to serve with tortilla chips!
How good does this sound > Mexican Chicken and Street Corn Chowder . I love it!
Creamy Zucchini Pasta sounds like a good one for using up summer zucchini.
We all need to try Pan Fried Cinnamon Bananas – yum!


Here’s what’s going on in my life:

We headed to the coast of Oregon (Pacific City) for a few days to stay in an Airstream campground. It was so much fun!
We saw “Cake” in concert!
My college roommate and her husband came to visit us here in Oregon. I’ve been friends with them for 38 years!

Have you ever had zoodles (zucchini noodles)? We make zoodles all the time for dinner! I use a Spiralizer to make zoodles. It’s a great investment!

Rocky Road No Bake Cookies  are made with just five ingredients. They have the typical, classic rocky road flavors of chocolate, marshmallow and almond.
